Ingredients
  1. ½ cup tahini
  2. ¼ cup organic raw honey, melted on low (adjust sweetener to your taste)
  3. ½ cup ground flax seeds
  4. ½ cup dried blueberries (fresh or frozen do not work!)
  5. ¼ teaspoon cinnamon
  6. 2 tablespoons cacao nibs
  7. ½ cup hemp seeds
  8. ¼ cup chia seeds
  9. ½ cup finely shredded coconut
  10. Pinch Celtic salt
  11. 1 teaspoon vanilla
  12. "Toppings" for rolling – any or all of the following: Finely shredded coconut. white or black sesame raw seeds, cacao
Instructions
  1. Melt raw honey on very low heat - do not let it get too hot as heat destroys the nutrients in raw honey
  2. Combine all ingredients in large bowl - stir to mix thoroughly.
  3. With hands, form into 13 - 14 balls.
  4. Roll ball in topping of your choice.
  5. Freeze covered
Notes
  1. Goji berries, while not as sweet, can be substituted for blueberries and have just about the same sugar value
  2. Maple syrup can be substituted for honey if you want to go vegan!
  3. Best frozen or very chilled.
