Ingredients
  1. Fresh Peach Salsa
  2. 2 tomatoes
  3. 2 peaches
  4. 1 clove garlic, finely minced
  5. 1 jalapeño pepper, finely minced (you can de-seed for less heat)
  6. juice of 1 lime
  7. 1 tablespoon fresh cilantro, chopped
  8. 1 shallot, finely minced
  9. pink Himalayan sea salt (optional)
Instructions
  1. Chop peaches and tomatoes and place in small bowl.
  2. Add the garlic and shallot.
  3. Toss with pepper, lime juice and cilantro.
  4. Sprinkle with pink Himalayan sea salt if desired.
Notes
  1. Use this salsa in lettuce wraps, on top of black bean tostados, or spoon on top of grilled chicken or fish.
